Crust-less Summer Zucchini Pie

I recently tried this recipe which I found here:

I love zucchini so I will be making this again.

Here is how mine turned out:


Crust-less Zucchini Pie

Ingredients:

  • 10 oz shredded zucchini, all liquid squeezed out 
  • 1/2 cup shallots, chopped
  • 1/4 chopped fresh chives
  • 1/2 cup part skim mozzarella
  • 2 tbsp grated parmesan cheese
  • 1/2 cup white whole wheat flour (King Aurthur)
  • 1 tsp baking powder
  • 2/3 cup fat free milk
  • 1 tsp olive oil
  • 2 large eggs, beaten
  • 1/2 tsp kosher salt
  • fresh cracked pepper to taste
  • cooking spray (I used my misto)

Directions:

Preheat oven to 400°. Lightly spray a pie dish with cooking spray or your misto.Combine zucchini, shallots, chives, and mozzarella cheese in a bowl.

Sift flour and baking powder in a medium bowl. Add remaining ingredients to the bowl and blend well. Combine with zucchini mixture and pour it into the pie dish.

Top with parmesan cheese and bake 30-35 minutes or until knife comes out clean from the center. Let it stand at least 5 minutes before serving.

Makes 6-8 servings.

Beach House China Cabinet

Since I am going with grays & white in the main living space I wanted to bring in some accents with turquoise/light blues. {water colors}
So I chose SW Halycon Green.
To coordinate with other pieces in the room I painted the interior with SW Proper Gray.
The cabinet has a light with glass shelves.
This was a great find at Salvation Army for 19.99!
A little elbow grease & paint and it looks refreshed.
Satin Nickel completed the hardware update.
Light distressing & water based poly completed the update.

Beach House Flooring

The Beach House had no flooring throughout.
We decided to install Shaw Resilient flooring. (Not a sponsored post.)
It's is a vinyl floating floor that looks really nice once installed which we did ourselves.
It's is waterproof which was one of the main considerations when choosing it & our children also have dogs so that was another factor for easy cleanup.



The flooring locks into itself.

We are very pleased with the finished product. 
Durable, easy to clean & low maintenance!

The Old Causeway Steak & Oyster House ~ Manahawkin, NJ

The Old Causeway is a new restaurant in Manahawkin, NJ that just opened.
We tried it this weekend as it was getting great reviews and it did not disappoint!











Strip Steak.

The cheesecake with raspberry sauce was excellent! {As you can see!}
